Gradient overlay
• 10 Tbsps. Quaker Instant / Quick Cooking Oats, grind coarsely in a blender
• 10 Tbsps. whole wheat flour
• ½ tsp. chicken seasoning powder
• ½ tsp. salt
• ¼ tsp. black pepper powder
• 4 chicken breasts (400g), skin and fat removed, cut into 4 pieces 
• 1 egg, beaten well
• 2 egg whites, beaten well
• 4 tsps. unsaturated cooking oil
 

Cooking Instructions

• Pre-heat an oven to 200°C (400°F).
• In a bowl, mix oats with flour, chicken seasoning, salt and black pepper powder.
• In another bowl, mix chicken pieces with the beaten eggs. 
• Roll the chicken pieces in the oat mixture, until each piece is completely coated.
• Spread cooking oil on a large baking tray and place the coated chicken pieces on the tray.
• Bake the chicken pieces for about 20 minutes, or until cooked.
• Turn over the chicken pieces when the top browns slightly in around 10 minutes and continue cooking.
• Serve the chicken with your favorite sauce.
