Prepared with Quaker Oats


    For The Batter:

  • 1 Cup Quaker Oats
  • 2 Cups flour
  • ½ Cup brown or white sugar
  • 1 Teaspoon bicarbonate soda
  • 1 Teaspoon baking powder
  • ½ Teaspoon cinnamon
  • ½ Teaspoon ground ginger
  • ½ Teaspoon vanilla
  • ¼ Teaspoon salt
  • 3 Eggs
  • ¾ Cup vegetable oil
  • 3 Cups grated zucchini
  • ¾ Cup pecan, roasted
  • For The Topping:

  • 1 Cup cherries
  • 1 Cup sliced orange, grapefruit and tangerine
  • 1 Cup labneh


  1. Preheat the oven to 170 degrees
  2. Sift dry ingredients in a bowl
  3. Whisk eggs and sugar in a bowl with an electric beater for 2 minutes
  4. Add oil and continue whisking
  5. Gradually add flour mixture alternating with zucchini
  6. Fold in nuts and oats lightly with a spatula
  7. Grease a loaf tin or muffin molds
  8. Pour in the mixture and bake for about 40-50 minutes or until golden brown
  9. Leave to cool for a few minutes
  10. Flip on to a wire or cooling rack
  11. To Serve: Top the muffins or bread slices with a dollop of labneh and fruits
