DICED APRICOTS, STEWED CINNAMON APPLES & PUMPKIN SEEDS
- 1 cooking apple.
- 1/2 teaspoon cinnamon.
- 1 tablespoon golden caster sugar.
- 2 tablespoons water.
- 1 small handful of ready soaked apricots, diced.
- 1 dessertspoonful of pumpkin seeds.
- Peel & core the apple.
- Cut it into chunks.
- Put them with the cinnamon, sugar & water in a heavy saucepan and simmer gently until softened.
- Allow to cool a little.
- Spoon over the cooked porridge.
- Top with the apricots & pumpkin seeds.
