• 5 Tbsps. Quaker Oats
• 4 Tbsps. whole wheat flour
• 300g fish fillet, wash, drain & cut into small pieces 
• 2 egg whites, beaten well
• 1/2 tsp. salt
• 1/2 tsp. pepper
• 1 Tbsp. oil
For lemon sauce
• 5 Tbsps. lemon juice 
• 12 Tbsps. water
• 2 tsps. sugar
• 2 tsps. corn flour, mix with water to a fine paste 
• 1 tsp. grated lemon peel

 

Cooking Instructions

• Mix together oats, whole wheat flour, salt and pepper.
• Dip the fish in egg first and then in the oat mixture.
• When all the pieces of fish are coated in the oat mixture, pan fry the fish on a non-stick pan with very little oil.
• Cover and cook the fish on a simmering flame, until it turns brown and cooks nicely on both sides.
• Dish out the fish and serve with lemon sauce.
For lemon sauce
• Boil lemon juice, water and sugar. Add corn flour paste and stir until the mixture thickens.
• Add lemon peel, and cook for 1 minute. 
• Dish out into a small bowl.
